I am very much an introvert but I adore being around the people I love. So I’ve always struggled to find my balance with being social while prioritising my me-time. Since mid-March I tried organising my weekends a little differently. Four months in and I’m feeling pretty well balanced! Basically all I did was schedule my major plans on Saturdays leaving Sundays entirely for myself…was it always this simple?🙃
Lemme walk you through a random weekend.
Spring time in Korea is always so special. You feel your very personality defrosting from the winter cold and it makes even the most serious of hermits wanna head out into the sunlight and admire the colours, the warmth and the promises of a fresh start that spring carries along with her. All that goodness in the spring air had my friends and I planning for a cute little park picnic which turned into an indoor lunch since the weather was not on our side 🙄.
And, ladies, I cannot emphasises this enough but having women in your life to share good food and impactful stories with is entirely everything! We sat around my coffee table for hours just talking. Talking about experiences, talking about perspectives, feelings, understandings, confusions, EVERYTHING. And there are just few things as wholesome as that. So if you aren’t making a conscious effort to surround yourself with women you love, man are you missing out on a big part of what it is to be a woman.
As for the food it was a yumminess overload. We had wraps, mac ’n cheese, dumplings, chicken wings, crackers, pizza, strawberries, grapes and a ton of snacks too. There was (as there always is) too much food for just the 6 of us but that meant everyone got to leave with some leftovers, so no harm done.
One thing I really wanna share is my pizza recipe ‘cause it’s so good and super simple since I don’t actually make the dough. All you need are some sheets of puff pastry, a good tomato base (I do a simple marinara with no onions) and your chosen toppings. I went with, onion, mushroom, sautéed chicken and, of course, cheese. You’ll roll out your dough to the desired size and bake ’em as is for about 3 minutes before adding the toppings and putting them back in the oven to get nice and melty. Done!
As for the mac ’n cheese, my secret ingredient is a little chicken stock in the cheese sauce. It’s a game changer, I promise you.
I’m really in love with the flow of my Sundays lately, I feel so centred and well rested by the evening and that, for me, is the best way to get the next week started. This particular Sunday I started my day (as I’ve been starting everyday, ’cause no one told me that 30 means additional fibre is non-negotiable😑) with a bowl of oats, chia seeds and fresh strawberries after my usually cup of coffee.
Next on the agenda was a quick at-home pilates workout. I’ve been doing home workouts for over a month but this was my second time doing a pilates one ’cause the Instagram girls had me thinking it was cute…it, in fact, was not cute. I thought that since no equipment was needed it’d be easier and it was not. I’ll be honest with you, I took several breaks I still felt exhausted afterward. All that to say consistency matters🙄, I know this is the hardest part but I’m prepared to keep pushing.
After that self-torture I had my everything shower then sat down to finish the last few episodes of Little Fires Everywhere (on Prime). It was released in 2020 and I highly recommend giving it a watch. It’s really thought provoking and touches on a number of issues that impact women and people of colour.
I made myself some lunch using the pizza leftovers and got some work done. I usually never find the time or motivation to sit and organise my life so having actively created this space has been super beneficial.
And, as most Sundays go, I ended my day off with dinner (which was a chicken curry that I forgot to take pictures of) and some calls with my family.
I went to bed that night feeling so well rested and ready to take on the next week of work! Here’s hoping I manage to keep this up.
